Looking after yourself is so important, which is why we are running a 15 week accredited course covering cooking, healthy eating, and a range of fitness activities to boost wellbeing.
This week, we have been looking at making healthy meals from vegetables grown in our garden. On today's menu is a tasty Leek and Potato Soup, both delicious, healthy, and versatile vegetables, they make great ingredients for a tasty dish like this and can be grown in your own garden. Learning how to alter recipes based on what you have in your own kitchen is key to eliminating barriers so our participants have been talking about subsidising ingredients, but the recipe we based our soup on is here. 2 potatoes (peeled and cut into 1cm pieces)
1 small onion (cut the same size as the potatoes)
1 large leek
1/2 pint vegetable stock
